WONDERBERRY COCKTAIL 

This non-alcoholic cocktail from The Virgin Mary Bar in Dublin's new menu is indulgent with real depth of flavour - you won't miss the alcohol at all. This simplified at-home version comes from Alex Morrel, beverage director at The Virgin Mary,  to help you test your mixing skills and impress your guests

WHAT YOU NEED

30ml Siegfried Wonderoak

20ml APRTG bittersweet aperitif

30ml strawberry jam syrup (see below)

Lemon juice

Squirty cream

Frozen strawberries

 

FOR THE STRAWBERRY JAM SYRUP

Equal quantities of strawberry jam and water

WHAT YOU DO

Step 1. First make the jam syrup. Boil equal parts jam and water together until the sugar has dissolved, then allow to cool.

Step 2. To make the cocktail, add the Siegfried and APRTF to a shaker with ice, 30ml of the cooled syrup and a squeeze of lemon juice for brightness. Shake vigorously then strain into your choice of glass.

Step 3. Top with some squirty cream and a few freeze-dried strawberry pieces, then enjoy.
