WHAT YOU DO
Step 1. Preheat the oven to 200˚C/gas mark 6.
Step 2. Sieve the flour and bread soda and add the cayenne pepper, salt, chopped sage and thyme.
Step 3. Crumble in the feta cheese and, using your hands, mix ingredients well.
Step 4. Make a well in the centre of the dry ingredients and add the beaten egg, then add half of the buttermilk, and using a fork, stir gently but briskly to combine. Add a splash more buttermilk if the mix seems too dry, then use your hands to combine all ingredients into a dough ball. Just mix enough to bring the dough together then lightly shape into a round, about 5cm thick.
Step 5. Cut a cross in the top of the dough and bake in the preheated oven for approximately 30 minutes until the base of the bread sounds hollow when tapped, and the loaf is a nice golden brown colour.
Tip: It's important with soda bread to keep the kneading and mixing to a minimum.
