TRADITIONAL IRISH BARMBRACK
Barmbrack is a traditional Halloween dish, so ahead of the spookiest day of the year, I've included a recipe for you to try below
WHAT YOU NEED
375g packet of fruit mix 300ml cold tea 50ml of whiskey, optional 225g plain flour 2 tsp baking powder 125g light brown sugar or caster sugar 1 tsp mixed spice 1 egg, beaten
WHAT YOU DO
Step 1. Soak the fruit overnight in the tea and whiskey. Step 2. Preheat an oven to 170C/325F/Gas mark 3. Grease a loaf tin. Step 3. Combine together the dry ingredients, then mix in the beaten egg. Step 4. Add a little of the tea and whiskey mix, bit by bit, into a wet dough is achieved. Step 5. Stir through the fruit and any trinkets you want to add. Step 6. Pour into the loaf tin, bake for one hour. Cool and serve toasted with lashings of butter.
