WHITE PUDDING SCOTCH EGG 

Today's exclusive recipe comes to you from the team at Dillinger's in Rathmines. Dillinger's is part of John Farrell's restaurant group, which also includes 777 and The Butcher Grill. This dish was formerly on the latter's popular brunch menu.

"The Scotch egg is a classic British dish. Here, we give it an Irish twist with the white pudding, which adds a spiciness and texture," says Farrell of this brunch dish.

WHAT YOU NEED

2 eggs
200g white pudding
50g plain flour
2 egg yolks
250g panko breadcrumbs
1 litre veg oil
Brown sauce

WHAT YOU DO

Step 1. Boil the eggs in rapidly boiling water for five minutes and refresh in iced water. Peel and set aside. 
Step 2. Beat the white pudding in a bowl with a wooden spoon until soft. 
Step 3. Flour the eggs and wrap in the pudding meat. Flour again, dip in the egg yolk and then in the panko. 
Step 4. Fry in the hot veg oil at 175C for six minutes. Serve with Maldon salt and brown sauce
