DONAL SKEHAN'S LITTLE LEMON CAKES
The recipe for these pretty little cakes comes from celebrity chef Donal Skehan. Speaking about them, he explains that they're perfect for a party.
"Every party needs a bit of sweetness and these little lemon cakes bring the sweetness on every level. They are incredibly cute and even easier to make," says Skehan.
WHAT YOU NEED
175g self raising flour 110g caster sugar 1 tsp baking powder 1 lemon, zest only 2 tbsp poppyseeds 110g soft margarine or butter 2 large eggs 50ml milk
FOR THE FROSTING 1 lemon, juice only 150g icing sugar
WHAT YOU DO
Step 1. Preheat the oven to 180C/gas mark 4 and fill a non stick cupcake tray with paper cases. Step 2. In a large bowl, combine all the dry ingredients. Make a well in the centre of the bowl and break in the eggs and add the butter in small pieces. Using an electric hand mixer, beat all the ingredients together until combined. Step 3. Add in half the milk/water and beat again until combined. You are looking for the batter to be light and creamy. Step 4. Divide the batter evenly into the paper cases and place in the oven for 20 minutes or until firm and light brown on top. Step 5. Allow to cool on a wire rack before applying the frosting. Step 6. Place the icing sugar in a bowl and add a little lemon juice at a time, whisking to incorporate until you have a nice smooth mix, which is still quite stiff. Spoon on about 1 teaspoon of the icing to each cake and serve.
