MULLED RED WINE

Mulled wine is quintessentially Christmas, warm and comforting on a chilly night, but it can be horrible if made with poor quality wine and too many spices. This simple recipe comes from the Allen family at Ballymaloe House, who advise that you opt for a drinkable wine and use a light hand when it comes to the spices

WHAT YOU NEED

75-110g sugar 
1 bottle good red wine 
1 lemon, thinly-pared rind 
1 small piece cinnamon bark 
1 blade mace 
1 clove

WHAT YOU DO

Step 1. Put the sugar into a stainless steel or cast-iron saucepan and pour the wine over.
Step 2. Add the lemon rind, cinnamon bark, mace and the clove.   

Step 3. Heat slowly, stirring to make sure the sugar is dissolved. When it is hot, but not scalding, serve in wine glasses.
